Guy Ritchie aimed to present a more grounded and less stereotypical version of Sherlock Holmes. So it is not surprising he intentionally omitted the deerstalker hat from the famous detective. It was also more in keeping with Arthur Conan Doyle's original novels and short stories, as Holmes was never described as wearing that type of hat. Ritchie also ensured the iconic line "Elementary, my dear Watson" did not appear in the script. This exact line was never penned by Doyle either.
